Cuppy Cakes! Vegan Vanilla with Cream Cheese Frosting

Ok ... so I did it. I started baking. Generally, the only time I bake is around Christmas. I bake enormous amounts of fattening treats that end up getting thrown away... generally half of them taste good and the other half are nasty. Let's not discuss the Sweet Potato thing the other year.... that was a disaster!


Well this week, I didn't actually bake one thing... I baked THREE THINGS-- all vegan! Jelly Donut Cupcakes and Chewy Chocolate-Raspberry Cookie thingies from Veganomicon: The Ultimate Vegan Cookbook by Isa Moskowitz and Terry Romero. The most awesome were the Vegan Vanilla Cupcakes with Cream Cheese Frosting from their Vegan Cupcakes Take Over the World.

How is Cream Cheese Frosting vegan you ask? Well... it was Tofutti Better than Cream Cheese... and I for one am just starting to sample tofu and I couldn't tell it had tofu in it!
Next: Coconut Lime Cuppycakes and Whole Wheat Muffins.
PS- This blog marks a series of firsts: My first REAL blog, first vegan cupcakes, first piping experience (pretty good for a ziplock bag with the corner cut off huh?), and first time trying to photograph something I made. WHOO HOO for me!!

Thank you so very much for your comments! The sandwich you were talking about in your comment sounds really, really good! And I will definitely make that Chipotle Aioli. I bought my first jar of nayonaise and that sounds oh-so good.

Those cupcakes look so perfectly adorable! I haven't tried any vegan cream cheeses, but you say the tofutti one was good?

Hellz yea for Cavender's seasoning! I'm so glad somebody else knows what I'm talkin' about. My boyfriend eats it by itself...just seasoning out of his hand. Kinda gross, but I've been known to do it too...when no one else is looking.

Anyway, your cupcakes look awesome. I still haven't tried that vegan cream cheese frosting, but the vanilla cupcakes are so awesome!

Yikes! those cupcakes all look so great. That product is also great if you want to bake a vegan cheese cake - I usually add a little agar to it to help it set.

All looks yummy!

I actually had the last raspberry cookie lying around for like three months. And that is not something that usually happens to me!
That tofutti cream cheese is impossible to find in Germany, so I'll have to drool at your pictures...

Oh and yes I'm a student technical writer for computer services at the university I attend. It is indeed pretty boring. But it gives me lots of blog time! lol. ;)

Great looking cupcakes! I'm in love with the vegan cream cheese recipe in VCTOTW. After making gallons of the "real" kind in a bakery, that recipe is waay more delicious and satisfying!
